Chicken Nuggets - Keto

Ingredients

  • 1 chicken breast (thinly sliced)
  • 1 teaspoon garlic salt
  • 1/2 teaspoon freshly ground pepper
  • 1 T vegetable oil
  • 1 egg (beaten)
  • 1 cup cheese (cheddar or Kojak)
  • 3 T green onions (half and half tops and bottoms)
  • Directions

    1. Season the chicken breast with garlic salt and pepper.
    2. Fry the chicken breast in the oil until done.
    3. Remove the chicken from the heat.
    4. Shred the chicken and allow to cool a bit.
    5. Beat egg in a large bowl.
    6. Add cheese, chicken, and onions and stir to combine well.
    7. Fill small muffin tin spaces with mixture (packed in and heaping is OK).
    8. Bake at 400 degrees for 20-25 minute (tops should be slightly brown).
    9. Serve with buffalo sauce (or sauce of choosing).
